Restoration usually happens in stages. First the source is stopped and standing water is extracted with pumps and truck-mounted or portable vacuums. Then the company measures moisture in floors, walls and cabinets, removes materials that cannot be dried, such as soaked carpet pad, and sets up air movers and dehumidifiers to dry what remains.
Speed matters because mold can begin to grow on wet drywall, wood and carpet within a day or two in warm, humid conditions. Water also wicks up drywall and spreads under flooring, so the damage can be larger than what you see. Ask the company to show you moisture readings at the start and the end of drying.
